Jim Watkins, one of the owners and founders of Sociable Cider Werks, approached us with this idea after returning from a trip to Portland. He told us that Pommeau was the all the rage in Portland and wanted to see if wed be interested in trying to make some ourselves. The answer was obvious: Duh! Pommeau is a fortified apple wine, typically from Northern France. Ours starts with Sociable Freewheeler Cider, which is made from a distinct blend of Haralson, Honeycrisp and SweeTango apples. We distill the cider into an apple brandy and then we cut the proof of the spirit to bottle strength (34 proof) by adding unfermented Freewheeler juice. The results: A huge apple flavor, reminiscent of an apple wine.
