Pinot Grigio grapes can be purple-gray to a rich copper but, like most wine grapes, the juice is clear. We gently pressed the grapes and cold-fermented the juice in stainless steel tanks to capture the fresh varietal character. In the Italian tradition, we didn?t oak-age the wine, thus keeping the fruit-focused expression.
