Vinification: Made from hand-selected grapes grown on over 10 year old vines planted 80-100m. (160-330ft) above sea level. Cold maceration prior to fermentation in order to obtain the maximum aromatic expression of colour and fruit. Aged for 3 months in French oak barrels.
Food pairing: Red meat and game, semi-mature cheeses, pulses, cured meats and casseroles. Tasting Note: Colour: glossy aubergine. Aroma: blackberries, ink, green coffee beans, tasty notes and hints if vanilla. Taste: concentrated and round with soft tannins and refreshing. It has a long finish and is soft on the palate.
