The selection of plots is conducted in our vineyard and the fermentation takes place at low temperature to extract the best aromas of this noble grape, recognized as one of the best grape varieties to develop a quality sparkling wine. The bottles are then stored in cellars located 25 meters deep, where they enjoy a cool and constant temperature. It is here, in the heart of the underground cavities carved in the tuffeau stone, fine-grained limestone typical of the Loire Valley, that this Chardonnay Le Val Brut will flourish gently during 9 months on slats. The last step will reveal all the complexity and finesse of this wine.
This wine develops complex floral and mineral aromas as well as discreet notes of white-fleshed fruit. In the mouth, it will reveal an airy style, a lot of freshness and balance. A long, ample and finessed finish. It is the perfect companion for festive moments, as an aperitif or to serve with fish terrines, crustaceans or fruity desserts.
