To the north of Avignon on the left bank of the Rhone, the territory of Châteauneuf-du-Pape extends on 5 communes between Orange and Avignon. It is a succession of clay-limestone plateaus with the famous rolled pebbles that allow the vines to withstand the drought of the Mediterranean climate and the mistral. The area of our vineyard in AOC Châteauneuf-du-Pape is 20 hectares. It is spread over the three main terroirs of Châteauneuf-du-Pape: rolled pebbles, Urgonnians and sands. This diversity contributes to the aromatic complexity of our wines.
Mid-September, full maturity of the grape varieties. The harvesting is done by hand followed by very selective sorting of the berries before the winemaking.
Yield: About 25 to 30 hl / ha.
After a cold skin maceration (4 hours) and pressing, alcoholic fermentation takes place at 18 ° C. Malolactic fermentation is avoided to keep the freshness and vivacity of the wine. No collage is made on this wine.
Assembly & grape varieties
Clairette (40%), Bourboulenc (10%), White Grenache (40%), Roussanne (10%).
Beautiful light gold color with green reflections. This wine is clear, clear and brilliant. Nose of great finesse and richness, with the connotations of pears and citrus fruits. Race and dense, good persistence, this wine will have a beautiful evolution on the mineral.
Food and wine pairing
Very popular as an aperitif or with a seafood platter, it goes very well with fish, white meat and parsley cheese.
If kept over a dozen years it becomes mineral and ideal with a chicken with morels or an old County.
