Mid-way between Beaune and Paris, the Chablis winegrowing region stretches over around 20 communes. Nestled among the valleys and wooded hilltops, the vineyards cover the hillsides running alongside the pretty Serein Valley. The vines sink their roots deep into the clay-limestone soil, drawing on them for their characteristic mineral aromas, to the delight of Chablis drinkers.

This 2014 by Charles Vienot has notes of mineral and citrus on the nose followed by a crisp, dry and acidic palate with a clean citrus and stone notes.  This is a perfect wine to pair with starters, salad or fish courses.

Region Description:

(shah blee)—this village, northwest of the Côte d’Or is the closest burgundian commune to Paris. Although Chablis’ wines are 100 percent Chardonnay, they are quite different from the white wines of the Cote d’Or. Most Chablis wines are fermented and aged in steel, and because the region’s climate is cooler, it produces wines that are lighter- bodied and more acidic. Chablis wine is very dry and sometimes flinty, without the rich, ripe style of Cote d’Or white Burgundies. Chablis is an ideal companion to seafood, especially oysters.
