Product Description

Located in the north of Burgundy, in Yonne department, the appellation stretches over around 20 communes that cover the hillsides running alongside the pretty Serein Valley. The vineyard enjoys an exceptional geological situation. The main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). Deposits of tiny oysters can still be found today in the rock, remains of a time where the sea was totally covering this territory.

Golden in color. Intense and elegant nose of peach, pear, pink grapefruit and almond. The palate is fresh, balanced and creamy with notes of cherry blossom and zest of citrus fruits. The finish is long, iodized and persistent. A very complex and pure wine, perfectly in the style of J.Moreau & Fils.

Region Description:

(shah blee)—this village, northwest of the Côte d’Or is the closest burgundian commune to Paris. Although Chablis’ wines are 100 percent Chardonnay, they are quite different from the white wines of the Cote d’Or. Most Chablis wines are fermented and aged in steel, and because the region’s climate is cooler, it produces wines that are lighter- bodied and more acidic. Chablis wine is very dry and sometimes flinty, without the rich, ripe style of Cote d’Or white Burgundies. Chablis is an ideal companion to seafood, especially oysters.
