Le Vieux Donjon is managed by Claire Fabre (Michel), third generation winemaker and manager of the property.  The organically farmed Le Vieux Donjon produces just two wines every year, a red and a white, ensuring that their best selection of the harvest is represented in each bottle with the red always a rough blend of 75% Grenache, 10% Syrah, 10% Mourvedre and the balance a mix of other permitted varieties.

As many as thirteen different kinds of grape can end up in one bottle, although most vintners use only three or four, especially Syrah, Mourvédre, and Grenache.
