The 2004 Blackstone Cabernet Sauvignon has great complexity. Layered notes of caramel toffee, ripe plum, and black cherry are accented by the suggestion of cinnamon-spice in the aromatics of this wine. Dry, full-bodied and rich in texture, the flavors of black cherry and licorice dominate the palate and carry through to a long, warm finish. Fine, supple tannin structure will stand up to the heartiest of beef entrees, but will compliment the delicate texture of elegant pork loin roast and subtle veal cutlet with accompanying reduction sauces.
Varietal: Cabernet Sauvignon
California produces the majority of wine made in the United States. Chardonnay, Cabernet Sauvignon, Merlot, Sauvignon Blanc, Zinfandel and Pinot Noir dominate the wine production in California, but many other varietials thrive in the California climate. Many fine wines are produced in California using Mediterranean grapes.
