The wine is also showing up more and more on wine lists as sommeliers at many of the country's top restaurants select CYRUS, impressed by the wine's depth and structure. Harvest was early in 2004 and the crop a big smaller. However the vintage did deliver some impressive fruit for Winemaker Kevin Hall to work with to craft the newest CYRUS. The Cabernet Sauvignon, the chief component of this proprietary blend, was concentrated with big tannins. To balance those qualities, Hall added more Cabernet Franc than he has in previous years, which contributed deep floral notes to the wine. This is a big structured wine that will drink beautifully for years to come, maybe 10 or even 15 years. There's aromas here of black cherry, dark chocolate and exotic spices and rich flavors of plum, blueberry and mocha.
